Why we love this wine?
Chatzivaritis Winery has been cultivating in the charismatic region of Goumenissa, since 1994, the indigenous Greek varieties Xinomavro, Negoska, Roditis, Malagousia, and Assyrtiko where the estate follows organically farming.
This is a full, rich wine with intense red colour with slight brick hues. Tannic, aromatic with a long finish in the mouth. Which has aroma dominated fruits like blackberry and cherry, complemented by aromas of spices, tomato, olive and vanilla.
Food Pairing
Try pairing this wine with Greek classics like Dolmadakia and Keftedes. Alternatively, pair Xinomavro with anything you would normally pair a Nebbiolo with. Creamy Risotto and Rib-eye Steak are always great options.

Soil: Sandy-clayey
Winemaking: Pre-fermentation cold maceration for 2 days, alcoholic fermentation at controlled temperature, with the wine remaining together with the lees for 8 months with periodic re-stirring.
Maturation: At least 12 months in French oak barrels, 6 months in bottles.
