Why we love this wine?
"Natural wine", with indigenous yeasts and only a minimum amount of sulphites added. This vibrant red wine has an intense nose composed of sun-dried strawberries, red fruits, cloves, cinnamon, fresh green notes, and balsamic. Balanced acidity levels in the mouth and elegant tannins on the finish.
100% Negoska with carbonic maceration
Food Pairing
Meat in spicy, rich sauces, game meat, oil braised vegetables, charcuterie and mature cheeses
Vinification
Carbonic maceration of the whole grape cluster takes place in anaerobic conditions for 10 days. After the extended maceration, the grape clusters are carefully pressed, and the remaining sugar is transformed into alcohol through the normal spontaneous alcoholic fermentation process. The wine remains in contact with the lees for 6 months and is unfined and unfiltered, with low sulfur level, added before bottling. It was aged 6 months with the lees in the tank
Vineyard
Linear layout of organically cultivated vineyard in Pentalofos (Wine-growing region of Goumenissa)
Tasting
100% Negoska.
Negoska is an indigenous Grape variety planted mainly in the prefecture of Kilkis in just a few hectares. There it is blended to the Goumenissa PDO and Xinomavro grape with a minimum of 20%.
There’s a hint of lift here with sweet cherry and spice notes. The palate is rich and spicy with nice density and some sour cherry character, and a bit of grip.
